A guard dog is a dog that some idiot dumped in a yard and put a "BEWARE OF DOG" sign on the gate. It is neglected and not socialized so it just barks at everything – I would say a good 75% of those dogs are not even aggressive and would probably run away cowering if you really confronted it.

A protection dog is one that has been bred and trained to be a protection dog. They cost thousands of dollars to buy and are more than just a barking deterrent. They are trained to corner and disable "dangerous" people. The dogs have to actually think, not just bark.
They have to react on commands by their owner and back off just as quickly on commands.

The Guard Dog is put out to live in the yard by ignorant owners that think it will do some good.
A Trained Protection Dog are like the dogs from the police force. They are highly trained in obedience and know what they are supposed to do, it’s their job.

A Guard Dog may be trained in sentry duty or it may an untrained aggressive dog that someone feeds and keeps to deter trespassers. A trained Protection Dog will work under a person’s command and has been taught to bite when ordered.

A guard dog typically patrols premises without a handler & will exhibit arbitrary aggression & attack if someone tresspasses on the property.

A professionally trained protection dog would attack on the express command of its handler, giving its human pack additional time to escape & could be relied upon not to take flight when faced with a real threat.

A properly trained Guard dog is not a pet they are bred and trained to do one thing and one thing only – guarding. A properly trained Protection dog can be companions and can be taken out into the general public.

NEITHER dog is for the casual novice dog owner however

There are two types of guard dogs. Professional trained guard dogs and junk yard dogs.
Professionally trained dogs are put through a training course to teach them to react to intruders by barking and acting aggressive. Most guard dogs are not expected to attack because they have no handler to call them off. They are for protecting fenced property.
Junk yard dogs are just unsocialised mean dogs that bark at any and everything and may fear bite but are under no training guides.
Personal protection trained dogs are trained to work only under handler guidance and are under both voice and leash control. They are thousands of dollars in dog and training and you must take a course to learn to handle the dog.
Police dogs are a type of personal protection dogs. Schutzhund training is a sport style of protection training. So is French Ring and PSA.
Guard and protection dogs are not for the average Joe, and can be dangerous in the hands of the wrong owner. They do not make great family pets.
Be very careful what you ask for.
Most breeds used are German Shepherd Dog, Belgian Malinois, Rottweiler, Doberman Pinscher, Giant Schnauzer, Bouvier, American Bulldog, American PitBull Terrier, Other breeds are also involved

Guard dog = Animal of stable temperament and drive who’s a little sharp and trained to bite ANYONE besides it’s handler who comes into it’s work space which is often a fenced lot of indoor warehouse. Private persons don’t need this type of dog.

Protection dogs are dogs trained more like Police Service Dogs, they’re dogs who’re willing to take a fight to somebody who may SEEM to be passive as well as openly aggressive persons. A Protection Dog (should) have 100% obedience and be a dog of very stable temperament. This is a dog who alerts to persons on command, and will bite and (hopefully) release on command.

-edit- After reading some of these answers I MUST ask where some of you people pull this BS from!?!?! "They are not expected to bite because no handler is there to call them off"….WRONG, if all we wanted was a dog to bark we’d through a $55 shelter mutt with a big mouth back there. REAL trained guard dogs will KILL those people stupid enough to jump the fence SO note to the wise, don’t steal from warehouses with signs that say "BEWARE, GUARD DOG ON DUTY"….some idiot got killed by 2 security dogs here a few months ago!
